Highly marbled varieties do not follow a simple linear pattern. Their sensory peak may occur earlier, and they may be sensitive to variations.

Linear Mature Logic

Conventional maturity assessment methods are based on fixed time periods and external characteristics. This approach may be proven and effective for conventional cattle breeds.

However, this logic reaches its limits with heavily marbled cuts. The aging process is not linear; the sensory peak occurs earlier and is highly sensitive to variations.
