Ronny Paulusch
Ronny Paulusch is a certified meat sommelier, maestro cortador, author, and internationally active education expert. He is the founder and managing director of M.E.A.T. GmbH (Meat · Education · Ambition · Travel), which combines hands-on professional training, structured teaching methods, and international experience in the skilled trades and the food industry.
With over 30 years of industry experience, Paulusch develops educational and licensing systems such as Conexxus® Didaktik and DKA Coreflex®, organizes international field trips, and oversees training and certification projects in Japan, Argentina, Spain, Finland, Germany, Austria, and Switzerland. His places of work include, among others, WIFI Graz, the Augsburg Butcher School, the SFF Training Center in Spiez, and the Federal Meat Academy in Gunma (Japan).
Ronny Paulusch is a graduate of Harvard University’s Higher Education Teaching Certificate program (Derek Bok Center for Teaching & Learning) and the author of the textbook *Didactics in the Trades* (2025). His work combines scientifically grounded pedagogy with practical expertise in the meat industry—ranging from aging, sensory evaluation, and processing to international meat culture and regulatory issues such as the responsible use of artificial intelligence in training and business operations.
