Independent Quality Standard

IMF‑X™

Intramuscular Fat Expression Protocol – Europe

Developed by Ronny Paulusch (Austria, 2025). IMF-X™ is a scientifically developed, physiologically based quality model for premium beef in Europe.

Definition

Measurable criteria instead of marketing jargon

IMF‑X™ defines how intramuscular fat is formed, developed, assessed, and certified.

IMF-X™ sets standards for marbling development, feeding logic, slaughter window, fat quality, and class separation (Fullblood, Purebred, Crossbred). The system is feed-neutral and compatible with European conditions without compromising quality standards.

Why IMF‑X™?

Premium prices require premium rules

The Problem in Europe

The term “Wagyu” is not protected in much of Europe. This leads to market dilution, price distortion, and a loss of trust, because crossbreeds, self-certifications, and unclear production periods are marketed under a premium label.

Premium prices clash with a lack of premium guidelines. The result: frustration in the restaurant industry, reduced comparability, and a weaker reputation for the entire category.

The Solution with IMF‑X™

IMF-X™ replaces claims with verifiable standards: genetic verification, defined feeding phases, strict adherence to slaughter windows, multidimensional quality assessment, and mandatory auditing and data reporting from the farm to the processing plant.

Measurable criteria provide a transparent basis for the standard's further development.

The Three Cornerstones of IMF‑X™

Origin, quality assessment, and production discipline are not considered separately. Select a pillar to explore its contribution to the system's logic.

Cornerstone 01

Traceability of origin

IMF-X™ requires traceable origin: proof of full-blood status, DNA validation, and clear classification. Under IMF-X™, “Wagyu” is a defined category—not a marketing term.

Genetic Testing · DNA Validation · Class Separation

Certification Classes

Clear classification. Clear labeling.

Fullblood100% Wagyu, DNA-verified → Certified Wagyu – Fullblood
Purebred≥ 93.75% Wagyu → Certified Wagyu – Purebred
Crossbred50–93.74% Wagyu → Wagyu Crossbred – Certified

Interactive Grading

Three Dimensions Instead of a Single Glance

The IMF-X™ Grading System combines IMF density, fat-melting index, and texture integrity. Select a dimension to read its grading logic.

Visual Marbling Level

Visual marbling score 1–12 based on calibrated references. Minimum level for certification: BMS 6—regardless of genetics.

Uses & Effects

From the farm to an independent evaluation

IMF-X™ is used to translate European premium programs into verifiable system logic: from genetics and feeding strategies to slaughter and cutting practices and independent evaluation.

The standard serves as a common framework for farms, associations, slaughterhouses and processing plants, retailers, and the foodservice industry—with clear obligations, roles, and threshold values.

IMF-X™ ensures comparability and safeguards premium pricing logic through verifiability. The result is a robust standard that builds trust, enhances exportability, and reduces market dilution—without disregarding regional feed realities.

Areas of Application

Who Should Consider IMF‑X™

Breeders & Raisers

A clear production philosophy, target values rather than rigid recipe guidelines, and a category that distinguishes itself from “Wagyu claims.”

Documentation & Publication

A standard with centralized system documentation

IMF-X™ is designed as a European quality and certification standard. It focuses on system logic and core components.

A detailed documentation of the standard—including the classification system, grading, data-feeding logic, audit structure, licensing and cost model, and visual system—will be published as the IMF-X™ Handbook in the third quarter of 2027. The handbook is available for a fee.

Regardless, a free preview is permanently available that summarizes the IMF-X Framework, the system's cornerstones, and its core logic.

System Application & Qualification

Implementation within the defined system logic

IMF-X™ is not currently an operationally implemented audit, inspection agency, or ongoing certification system. Individual consulting or implementation support is provided exclusively within the framework of the system’s logic and is intended to ensure the correct implementation, application, and quality assurance of IMF-X™.

System-specific training, onboarding, and certification programs are planned for the implementation, use, and quality assurance of the system, particularly for:

Associations and National OrganizationsBreeders and RaisersCutting plants and slaughterhousesGraders, auditors, and licensees

These formats are used to ensure the correct application of the IMF-X™ ruleset and are based exclusively on the defined system logic.
